 THE FRUIT

  The olive is long and slightly curved, asymmetrical, protuberant and flat along the back. The size and weight are average, at about 3 grams, but with a high fat yield.

The fruits mature late, beginning in the last week of October and ending in the first week in January. The olive’s colour depends on the degree of maturity, being green at birth, purple when mature and black-violet when ready for picking.

Its high resistance to falling makes it difficult to pick mechanically. Our oil is only produced using olives picked from the tree.
